Agarase

Agarase, also called agarose 4-glycanohydrolase, is an enzyme that catalyzes the hydrolysis of agar, leading to the formation of neoagaro-oligosaccharides from agarose. It is found naturally in bacteria, allowing them to use agar as their primary source of carbon. Agarases are classified based on their cleavage pattern into a-agarase and ß-agarase. a-Agarases cleave a-1,3 linkages to produce agarooligosaccharides, while ß-agarases cleave ß-1,4 linkages to produce neoagarooligosaccharides. In molecular biology, agarase can be used for efficient recovery of RNA or DNA fragments from low melting point agarose, which can then be used for cloning, amplification or sequencing. The enzyme can also be used in studying the composition and structure of cell wall polysaccharide of seaweeds and isolate protoplasts from seaweeds.
