Amylase, produced in the salivary glands and pancreas, catalyzes the hydrolysis of starch into simple sugars. It is present in blood and urine in small quantities but elevated levels are associated with pancreatitis, pancreatic injury, gallstones, or tumors. Amylase assays generally incorporate dye-coupled substrates that are cleaved by amylase. The resulting product can produce a measurable change in color directly, or indirectly via an additional enzyme, such as glucosidase.
