A new study from researchers at the University of California, San Francisco (UCSF) has revealed a surprising connection between dietary sodium intake and the risk of eczema, a chronic inflammatory skin condition. The findings, published in JAMA Dermatology, suggest that consuming just one extra gram of sodium per day—the amount found in a single Big Mac—can increase the likelihood of eczema flares by a staggering 22%.

"Eczema flares can be difficult for patients to cope with," said Katrina Abuabara, the study's corresponding author. "Especially when they are unable to anticipate them and don't have recommendations on what they can do to avoid them."

The cross-sectional study analyzed data from over 215,000 individuals aged 30 to 70 from the UK Biobank, which includes urine samples and electronic medical records. By examining sodium excretion levels and eczema diagnoses, the researchers found a clear association between higher sodium intake and increased eczema risk, severity, and active cases.

Specifically, each additional gram of sodium excreted over 24 hours was linked to 11% higher odds of an eczema diagnosis, 16% higher odds of an active case, and 11% higher odds of increased severity. Further analysis of 13,000 U.S. adults from the National Health and Nutrition Examination Survey revealed that consuming just one extra gram of sodium per day was associated with a 22% higher likelihood of having an active eczema case.

"Most Americans eat too much salt and can safely reduce their intake to recommended levels," Abuabara stated, highlighting the potential for dietary modifications to help manage eczema, a condition affecting over 31 million people in the U.S.
