
Sucrose assay kits include essential reagents to measure the abundance or concentration of sucrose in biological samples. Sucrose, widely known as table sugar, is a disaccharide composed of glucose and fructose. Sucrose assays generally involve the hydrolysis of sucrose into glucose and fructose by enzymes such as invertase or sucrase and the subsequent reaction of glucose. The resulting byproduct then reacts with a chromogenic or fluorescent probe, which generates a signal proportional to the concentration of sucrose in the sample. Sucrose assays can be used to study metabolic pathways in microorganisms, carbon partitioning and sugar transport in plants, food properties affected by sucrose, and biochemical pathways involving sucrose.
