Principle of the Assay: The anthocyanin content was determined by pH differential method. The anthocyanin had the maximum absorption peak at 530 nm when the pH was 1.0. When the pH was 4.5, the anthocyanins were converted to a colorless chalcone form with no absorption peak at 530nm. The absorbance values at 530 nm and 700 nm at different pH were measured using this characteristic, respectively. The pH difference method reduces the influence of solution pH and solvent difference, and eliminates the interference of other non-anisidine substances on the detection results
