Ovalbumin is the most abundant protein found in egg whites, making up about 60% of the total content. It displays sequence and structural similarity to the Serpin (serine protease inhibitors) superfamily, but its not a serine protease inhibitor. Aside from serving as a storage protein, the main function of ovalbumin remains unknown.
