OVA ELISA kits are assays designed to detect ovalbumin, the main protein in egg whites. A monomeric phosphoglycoprotein, it is the only egg white protein to have free sulfhydryl groups. It is made of 385 amino acids and has two genetic variants which differ at amino acid residues 289 and 311. It is a member of the serpin superfamily but does not have the ability to inhibit serine proteases. Ovalbumin is used to sensitize immune reactions as prolonged exposure increases IgE expression.
