The enzyme Trypsin is found in the digestive system where it hydrolyses proteins. Trypsin cleaves peptide chains mainly at the carboxyl side of the amino acids lysine or arginine, except when either is followed by proline. After protein purification, it has to be convert to peptides and these peptides are used further the mass spectrometers analysis.
