We measure water activity for a number of foods. The AquaLab Water Activity Meter is very efficient at conducting these measurements and is approved by Health Canada as an appropriate device. It works relatively fast for the majority of samples and takes up a small bench-top foot print. It also has great reproducibility.

Protocol Overview

Place the food sample in a sample cup so that it does not fill past the halfway mark of the cup (blend if necessary). Close the sample chamber so that "read" is selected. Wait until the reading has stabilize and the display is no longer in read mode.

Tips

Ensure a homogeneous sample is prepared and that it is spread well across the cup.

Results Summary

Readings were obtained in approximately 5 to 10 minutes, and were very reproducible. Samples with lower water activity (e.g. nut butters) took longer for the measurement to stabilize (approximately 20 to 30 minutes). Standard curves are generated with R2 values at 1.000 when appropriate averaging and rounding is performed according to government standards.
